Ingredients
  

Soup Base

  • 1 lb veal cut into cubes
  • 1 pack tamarind soup base or fresh tamarind
  • 6 cups water
  • 1 tbsp fish sauce

Vegetables

  • 1 radish sliced
  • 1 eggplant sliced
  • 1 cup okra
  • 2 cups kangkong (water spinach)

Instructions
 

  • In a large pot, bring water to a boil. Add the veal and simmer for 30 minutes or until tender.
  • Add the tamarind soup base (or fresh tamarind) and fish sauce. Stir well to dissolve.
  • Add the radish and eggplant. Simmer for 10 minutes or until vegetables are tender.
  • Add the okra and kangkong. Simmer for another 5 minutes.
  • Adjust the sourness with more tamarind if needed. Season with fish sauce or salt to taste.
  • Serve hot with steamed rice and enjoy your authentic Filipino sinigang soup!

Notes

Feel free to adjust the sourness to your preference by adding more or less tamarind. You can also swap veal with pork, shrimp, or fish for a different twist.
