For the Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp orange zest optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, beat eggs, granulated sugar, brown sugar, vanilla, and oil until smooth. Gradually fold in grated carrots and optional walnuts.
  • Slowly incorporate the dry mixture into the wet ingredients. Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • To make the frosting, beat softened cream cheese and butter together until creamy. Gradually add powdered sugar, one cup at a time, mixing well after each addition. Stir in vanilla extract and optional orange zest.
  • Level the cakes with a serrated knife. Spread a generous layer of frosting on the top of one cake. Place the second cake on top and frost the entire surface. Garnish with chopped walnuts or shredded coconut.

Notes
