Ingredients
  

Veggie Rolls

  • 8 sheets rice paper wrappers
  • 1 cup carrots julienned
  • 1 cup cucumber julienned
  • 1 cup red bell pepper thinly sliced
  • 1 cup purple cabbage shredded
  • 1 avocado sliced
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint
  • 1/4 cup fresh basil
  • 1/2 block firm tofu sliced

Peanut Sauce

  • 1/2 cup peanut butter natural, unsweetened
  • 2 tbsp soy sauce
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp maple syrup or honey
  • 1 clove garlic minced
  • 1 tsp ginger grated
  • 2 tbsp water or coconut milk

Instructions
 

  • Prepare all vegetables by washing, peeling, and slicing them into thin strips.
  • Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until soft.
  • Place the softened rice paper on a clean surface and add a small amount of each vegetable and tofu in the center.
  • Fold in the sides, then tightly roll up from the bottom, keeping everything compact.
  • Repeat with the remaining rice paper wrappers and ingredients.
  • To make the peanut sauce, mix peanut butter, soy sauce, lime juice, maple syrup, garlic, ginger, and water until smooth.
  • Serve the veggie rolls immediately with peanut sauce on the side for dipping.

Notes

Feel free to customize the fillings with your favorite vegetables or proteins! If the peanut sauce is too thick, add a little more water to reach your desired consistency.
