How To Make Sinigang

Sinigang is a beloved Filipino soup known for its tangy, savory flavor. This comforting dish can be made with pork, shrimp, fish, or even vegetarian ingredients, featuring tamarind as its signature souring agent.

Ingredients
  

Sinigang Base

  • 500 grams pork belly or ribs cut into serving pieces
  • 6 cups water
  • 2 tbsp tamarind mix adjust to taste

Vegetables

  • 2 tomatoes quartered
  • 1 medium radish sliced
  • 6 pieces okra trimmed
  • 1 cup green beans
  • 1 cup water spinach (kangkong)

Instructions
 

  • Blanch the pork in boiling water briefly to remove impurities, then drain.
  • In a pot, sauté onions and tomatoes in a bit of oil until soft.
  • Add the pork pieces and sauté for a few minutes.
  • Pour in the water and bring to a boil. Simmer until pork is tender (about 45 minutes).
  • Add tamarind mix, then the vegetables starting with those that take longer to cook. Add greens last.
  • Adjust seasoning to taste and serve hot with rice.

Notes

Use fresh tamarind if available for a more authentic taste. Add shrimp or fish instead of pork for variations.
