Ingredients
  

Dry Ingredients

  • 3 cups plain flour or half plain and half wholemeal flour
  • 1 tsp baking soda
  • 1 tsp salt

Wet Ingredients

  • 1 3/4 cups buttermilk or milk with lemon juice

Optional Additions

  • 1/2 cup raisins or dried cranberries for a sweet twist
  • 1/2 cup grated cheddar cheese for a savory twist
  • 1 tbsp fresh rosemary or thyme optional

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  • In a large mixing bowl, combine flour, baking soda, and salt.
  • Slowly add the buttermilk, mixing with a wooden spoon until a shaggy dough forms.
  • Turn the dough onto a floured surface and gently bring it together into a round loaf. Do not knead excessively.
  • Transfer the dough to the baking tray. Use a sharp knife to cut a deep cross on top.
  • Bake for 30-35 minutes, or until golden brown and hollow-sounding when tapped.
  • Cool on a wire rack before slicing and serving.

Notes

For best results, use fresh baking soda and don’t overwork the dough. Add raisins for sweetness or cheese and herbs for a savory twist.
