Instructions
Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
In a large mixing bowl, combine flour, baking soda, and salt.
Slowly add the buttermilk, mixing with a wooden spoon until a shaggy dough forms.
Turn the dough onto a floured surface and gently bring it together into a round loaf. Do not knead excessively.
Transfer the dough to the baking tray. Use a sharp knife to cut a deep cross on top.
Bake for 30-35 minutes, or until golden brown and hollow-sounding when tapped.
Cool on a wire rack before slicing and serving.
Notes
For best results, use fresh baking soda and don’t overwork the dough. Add raisins for sweetness or cheese and herbs for a savory twist.
