Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the cassava flour, sugar, and baking powder.
  • Add the grated cheese and softened butter to the dry ingredients, mixing until the mixture resembles coarse crumbs.
  • Beat the eggs lightly and incorporate them into the mixture. Knead until a smooth, pliable dough forms.
  • Shape the dough into small balls, about the size of a golf ball, and place them on the prepared baking sheet.
  • Bake for 15-20 minutes, or until the pan de bono is golden brown and slightly crispy on the outside.
  • Remove from the oven and serve warm for the best flavor and texture.
